Since we are now coming to the end of the school year, you will have plenty of time to try new recipes and methods to become a more sustainable person, specifically in your diet. In the website WWF, they asked some of their partners in the culinary world for their best recipes. This will help achieve the world a significant reduction in greenhouse gas emissions from our food supply chain and help the world’s health.
Some food recipes you can find are: Quinoa Power Pot, Carrot and Chickpea Burgers, Green Veg Crumble, Hearty Cowpea Lentil Stew, Red Cabbage Soup, etc.
The one I will be focusing on in this article is the Banana & Spelt Loaf Cake since it is a classic food that everyone loves and may even try myself one day to also improve my sustainable diet.
Ingredients:
260g Spelt Organic Flour
40g Ground Almonds
20g Baking Powder
100g Pitted Dates
275g Banana (overripe if possible)
80ml Rapeseed Oil
80ml Almond Milk
115g Soft Light Brown Sugar
1 Med/Large Banana for decoration
Process:
Preheat the oven to 160℃
In a small bowl, using a fork, mash cake recipe banana into paste
In a mixing bowl, combine spelt flour, ground almonds, baking powder, dates (finely chop) and the light brown sugar
Add the mashed banana, oil and almond milk to other ingredients and beat them together until they are well mixed
Place a loaf liner into a 900g loaf tin
Pour into prepared tin, slice whole banana in half lengthways and lay 2 halves over the top of banana mix lengthways
Place into over for 60-70 minutes until lightly golden brown color and when once cool enough, remove from tin and cool on a wire rack
